600g boneless chicken (cut in thin strips)
1 small red chilli (finely chopped)
3 tbsp vegetable oil
2 tbsp fish sauce
2 tbsp lime or lemon juice
2 spring onions (thinly sliced)
2 tsp cornflour
2 handfuls bean sprouts
2 cloves garlic (crushed)
2 tbsp minced fresh ginger
1 tsp sugar
Finely grated rind of 1 lemon
2 tbsp water
Snow peas, cabbage, carrots, peppers, etc - optional
Heat oil & fry lemon rind, ginger, chilli & garlic for about 1 minute until garlic starts to brown.
Add chicken & stir-fry for about 5 minutes until lightly browned.
Add sugar, fish sauce, lime juice & water mixed with cornflour & simmer for about 2-3 minutes.
Mix in sprouts & spring onions and any other vegetables for 1 minute to heat through.
Serve over rice or noodles.
