Recipe for Spanish Lemon Cake

1 lemon (rind)

2 eggs

1 cup milk

1 cup sugar

2 cups self-raising flour

1 cup canola oil

Preparation Method

Combine sugar and eggs. Add lemon rind then oil. Fold in the flour alternatively with the milk.

Bake in a round or similar size square cake tin at 180 degree celsius oven for about 40 minutes or until skewer comes out clean. Check after 40 minutes and see if it needs longer.
