Recipe for Southwestern Corn Pudding
Ingredients

6 cups fresh corn kernels (about 12 ears)

1 (4 1/2 oz) canned diced green chiles

1 cup 2% cheddar cheese (shredded)

3 tbsp all-purpose flour

2 cups fat-free half-and-half

2 tsp baking powder

1/4 tsp ground cumin

1 1/2 cups egg substitute

1/4 cup butter (melted)

1/4 cup sugar

1 1/2 tsp salt

Preparation Method

Combine sugar, all purpose flour, baking powder, salt & ground cumin.

In a large bowl whisk together eggs, whipping cream & butter.

Gradually add sugar mixture, whisking until smooth; stir in corn, green chiles & cheese.

Pour mixture into lightly greased casserole dish.

Microwave on high about 10-15 minutes. Stir every two minutes until mixture is set.
