1/2 cup instant rice
1 (15 oz) can crushed pineapple (drained with juice reserved)
1 (3 oz) package non-instant vanilla pudding mix
1/2 cup miniature marshmallows
1/3 cup chopped pecans
2 cups milk
Bring 3/4 cup reserved pineapple juice to a boil in a medium saucepan.
Stir in instant rice & simmer 2 minutes. Remove from heat, cover & let steam for 5 minutes.
Prepare pudding mix with milk according to package directions.
Fold marshmallows into hot pudding. Stir in pineapple, pecans & rice mixture. Chill until serving.
